Four Pillars Wild Isle Gin

The sixth release in Four Pillars' celebrated Distiller Series, Wild Isle Gin is a trans-Tasman collaboration with Island Gin, a boutique off-the-grid distillery on New Zealand's remote Great Barrier Island. Created by Four Pillars Head Distiller Sarah Prowse ("Prowsey") after travelling to the island to forage botanicals with Island Gin's founder Andi Ross, this gin captures the spirit of two wild island homes — the rugged Victorian coastline of Australia and the pristine forests and waters of Great Barrier Island. It's super coastal, beautifully savoury, and unlike anything Four Pillars has made before.

A layered and textured gin that opens with a distinctive maritime brininess — like the moment you step onto the beach and catch that first thick, salty breeze off the ocean. But it's never dank or marshy; instead, it stays fresh, bright and herbaceous, with the roasted bull kelp and saltbush delivering a savoury depth that's beautifully balanced by the citrusy kick of ruby grapefruit. The Mānuka honey weaves a subtle golden thread through the palate, adding a lovely floral sweetness and a gentle richness that rounds out the coastal character. Quandongs contribute a dry, tangy sweetness, while Tasmanian pepperberry and rosemary add warmth and aromatic complexity. The finish is clean and lingering — salty, herbaceous and unmistakably coastal, with a quiet nod to both island homes.
